Hello, I have some tips that I think it would help, that I use to make these egg´s like recipe
Use a non-stick pan
Use silken tofu instead of firm
Add just the black salt and turmeric and fried for a couple of minutes until it loose some liquid and then turn off the heat and let it cool for a while. This trick will make the egg texture more realistic.
Then turn on the heat again and add the remaining ingredients. I find this by accident and it turn really well.
Holy crap… so compkicated
The BEST and only tofu scramble I have been able to enjoy; I hate the taste of tofu, but THIS was “yum”!
Tip: The longer you cook it the better, I did add a tiny bit more of each of the spices
